These maple syrups are sourced at the beginning and end of the harvest each year during maple syrup season.
The golden, delicate taste represents the first tap of the season and has a lighter flavor and pale color. It's perfect for drizzling on pancakes or for brunch. The late harvest is from the end of the season and has a much darker color and richer flavor, making it perfect for glazing meats and vegetables or for desserts calling for a more robust flavor.
Each year maple season lasts from February to April, known as the "Sugar Moon." During that time, maple trees are tapped and the sap is collected as it rises and transported to "maple sheds" where it is boiled down to create award-winning maple syrup.
Our maple syrup is harvested exclusively from the top 200 farms in Canada's famous Bas-Saint-Laurent region. The concentration of maple sugar trees in this area means that the sap collected there is the finest in the country. This is very fitting as St. Lawrence himself is the patron saint of chefs. Tap Into Canada is 100% natural, includes a free maple syrup guide bookmark and is perfect for vegans.
