Deep and fiery flavours, sweet caramelised chillies, lemongrass and tangy tamarind. Sambal is the quintessential chilli sauce found on the dining tables of Singapore, Malaysia and Indonesia. There are countless variations and family recipes. It is slow fried for hours ("tumis") to intensify the flavour, aroma and colour and is delicious served on anything straight out of the jar. We like to drizzle sambal on fried eggs or traditional nasi lemak (coconut rice). Or mix it with soy sauce to make a quick salad or noodle dressing. Or spice it up by stir-frying veggies/meat/seafood.
