This Chinese oolong tea is known as Iron Goddess of Mercy (Tieguanyin or Iron Guanyin). It is crafted to the precise point where the leaves reveal their hidden delicacy. Oolong tea is China's most beloved tea. It originated in Fujian province and is thought to have first been produced in Wuyi Mountain at the end of the Ming dynasty.
It sits cleverly between the green and black tea categories and is sometimes referred to as blue tea. There are as many grades of oolong tea as there are fine wines.
