Simply sauté onion, ginger and garlic and squeeze in as much or as little of the spice paste as you like. Allow the spice paste to sizzle and release flavour while the chicken and red chillies brown. Add chopped tomatoes to create a curry and simmer until everything is cooked through. Serve with a mix of fresh coriander and yogurt.
