Simply saute the onion, ginger and garlic and squeeze in as much or as little of the spice paste as you like. Stir-fry the curry spice paste to bring out the flavour and add the bell peppers and chopped tomatoes. Add the shrimp to make the curry and simmer until everything is cooked through. Stir in some fresh coriander and serve.
