Traditionally crafted in the Italian Alps using organic single grain Il Capelli durum wheat for delicate flavour and sturdy construction, they are moulded in traditional bronze moulds for a granular texture perfect for holding decadent sauces.

Grown in the sun-drenched regions of Murge and Daunia in Puglia and named "Il Cappelli" after Italian Senator Raffaele Cappelli, durum wheat semolina is perfect for creating delicate artisanal pastas.

Spiralotti (which means "little spirals" in Italian) are molded in individually numbered real bronze molds to achieve a perfectly rough texture and the ideal spiral shape for pasta, while the Forno are baked and capture the flavorful pesto.
Made by the Felicetti family, artisanal Il Cappelli wheat is combined with Dolomite spring water and dried in the mountain air. Produced according to organic standards, traditionally extruded with No 9158 bronze die, suitable for vegans.
