Kikkoman Naturally Brewed Reduced-Salt Soy Sauce is a delicious seasoning that contains 43% less salt than Kikkoman's standard soy sauce. It is made using only natural ingredients such as water, soybeans, wheat, salt, distilled vinegar, ethyl alcohol, and sugar, and contains no additives.
It takes months to make using a special process that reduces the salt content but retains all of it. Amazing umami flavor.

Recipe Tips:

Recipe:
Sweet Potato and Eggplant Masala < 4 servings

Prep time: 20 minutes. Cook time: 50 minutes.

Ingredients 2 tablespoons sunflower oil
1 onion, peeled and thinly sliced
450g sweet potato, peeled and cut into 2.5cm cubes
1 small eggplant, cut into 1 inch cubes 2 zucchinis, thinly sliced ​​1 red bell pepper, seeds removed and finely chopped 2 tablespoons medium curry paste
Canned chopped tomatoes 400g
2 tablespoons Kikkoman reduced salt soy sauce
300ml vegetable stock 2 tsp cornflour
150g natural yogurt
fresh chopped coriander for garnish

Method Heat the oil in a large deep saucepan, add the onion and fry gently for 5 minutes. Add the sweet potato and fry for a further 5 minutes, stirring occasionally.

Add the eggplant and zucchini and sauté for a further 5 minutes, then add the red chilli. Stir in the curry paste, add the tomatoes, Kikkoman reduced-sodium soy sauce and stock and bring to a simmer. Cover the pot and simmer for about 30 minutes or until the vegetables are tender.

Combine the cornflour and yoghurt and stir into the saucepan. Cook over low heat, stirring frequently, until the sauce thickens. Cook for a further 2-3 minutes and top with chopped coriander.
Low in salt and full of flavor, this versatile seasoning can be used in a wide range of dishes, from Asian cuisine to everyday cooking. Try it in marinades, dressings, dips and sauces.
