Coconut, curry leaves and fenugreek create a fragrant Madras-style local favourite that pairs perfectly with eggplant, chicken or meat.
From the mountains of Kashmir to the beaches of Goa to the streets of Delhi, every square mile of India has its own unique spice combinations and local ways of preparing curry. Holy Cow's range of curries reflects local home cooking and slow-cooked methods. We caramelize our onions until golden and naturally sweet, and freshly roast and grind our spices. Then we slow-cook each curry for hours. We've done the hard work, so you can create your own curry in minutes - all you have to do is decide what to add.
A bite-sized guide to Chennai A bala by any other name...Madras may now be called Chennai, but South Indian cuisine is still a spectacular treat. Madras curry originated in British curry houses, but we've taken it back to its roots in Chettinad, South India, so you can enjoy the best of both worlds. The Chettiar people of South India cook some of the spiciest and most aromatic dishes in India. We've recreated their cooking techniques so you can enjoy this local Madras favourite at home.
