Organic Dried Linguine is greater than the sum of its parts - simple durum wheat flour is kneaded into a dough with Italian spring water and extruded through traditional bronze molds, giving the pasta a ridged texture that clings to sauces.
We use it in our cafe's popular clam linguine, tossed with olive oil, finely chopped chilli, fresh ginger and crushed garlic. In spring and summer, we use a peeler to cut zucchini and asparagus into ribbons and mix them into linguine cooked with crème fraîche, lemon zest and Parmesan, or serve with passata, olives, lemon zest and a spoonful of olive oil.
