Our premium unpasteurized brown rice miso is made from fermented Japanese soybean paste, carefully crafted according to an old family recipe and traditionally aged.

Clearspring founder Christopher Dawson became an expert on miso quality while living in Japan for 18 years. The Clearspring Series is his selection of the finest traditionally made Japanese misos. All traditionally fermented Japanese misos are prepared by cooking the finest organically grown ingredients (whole soybeans and grains) and mixing them with koji mold (grains or soybeans inoculated with Aspergillus oryzae spores), sea salt, and water. They are then left to age naturally at room temperature for many months in cedar barrels. The koji enzymes and natural yeasts and bacteria gradually break down the complex grains and beans into easily digestible amino acids, fatty acids, and simple sugars.
