The Catalonia region of Spain has been cooking with pasta since it was introduced by the Moors a thousand years ago.
Fideu is a thin, short pasta. Sant'Marti makes the finest pasta.
Sanmarti, an artisanal pasta manufacturer founded in 1700, uses only the finest durum semolina flour and mineral water drawn from local thermal springs.
These fideu noodles are often used to make a seafood dish called "fideuá". Like paella, fideuá also originates from the Valencian coast and is equally delicious.
