Ingredients Quick Pickled Onions
1 red onion (very finely sliced)
2 limes (juice and zest removed)
Honey or agave juice
2 tablespoons extra virgin olive oil for beans
5 garlic cloves, peeled and sliced 4 tablespoons tomato paste
1 1/2 teaspoons smoked paprika
1 smoky chili, such as ancho or chipotle (finely chopped) - increase or decrease depending on your tolerance. (Chef's tip: if using dried chilies, chop them with scissors)
1 teaspoon ground cumin
1 jar of Bold Bean Queen black beans and bean stock 180g grated cheddar cheese
4 tablespoons herby sour cream or crème fraiche A little coriander (about 15g)
Optional: Tortilla chips, please enjoy
Substitutions Ancho/Chipotle Chili Peppers - 1/2 teaspoon chili flakes Sour Cream - Greek Yogurt or a dairy-free alternative Cheddar - A few grated mozzarella and Parmesan cheeses
method
1. Heat the oven to 220 degrees Celsius.
2. First, pickle the onions in a small bowl by mixing them with the lime juice, a squeeze of honey or agave, and a pinch of salt. Set aside.
3. Heat the olive oil in a large ovenproof pot over medium heat. Sauté the garlic until lightly golden, about 1 minute. Add the tomato paste, paprika, ancho, and cumin, stirring (watch out for splatters), and sauté for 30 seconds, reducing heat as needed to prevent the garlic from burning.
4. Add the beans with the bean stock and a generous amount of salt and pepper - you may need to add a bit more water or stock at this point if you want it to have a runny porridge-like consistency - simmer over low heat for 8-10 minutes until it reaches this consistency.
5. Sprinkle cheese evenly on top and bake for 5 to 10 minutes until cheese is melted.
6. While the beans are cooking, place all of the herb sour cream ingredients (including the coriander stalks) in a food processor along with the lime juice from the red onion and process until smooth. Season to taste.
7. Once the beans have browned, let them sit for a few minutes before serving in bowls with sour cream and pickled onions.
