"I've been a long-time fan of this firm, chewy black rice - it makes a beautiful, dramatic garnish to curries - and I've turned to it. For a rice salad, you can also cook it in a pungent dressing made with soy sauce, fish sauce, a drop of toasted sesame oil, lime juice or rice vinegar, with grated ginger, finely chopped red chilli and chopped coriander. Pasta is fine too if you want it to be simple - put it in lots of boiling water before draining, although I like to fill a pot with twice as much cold water (so for 125g rice you'll need 250ml water), bring to the boil, reduce heat to low with the lid tightly closed and simmer for 30 minutes, by which time the rice will be cooked and the water absorbed."
