Simply saute onion, ginger and garlic and squeeze in as much or as little of the spice paste as you like. Simmer the curry spice paste to release the flavour and add the drained chickpeas. Make the curry by adding chopped tomatoes and spinach and simmer until everything is cooked through. Stir in fresh coriander and yogurt to serve.
